Hulk Superhero Pancakes

As a family we make pancakes every Sunday. It has turned into a beautiful ritual where we play Jack Johnson 'Eating Banana Pancakes' whilst we chat, laugh, sing and eat. My children end up sticky and happy, covered in peanut butter and honey, and Amir and I can't help but feel the silent feeling of joy that we're creating traditions that the kids will remember.
This recipe is a slight twist on our usual pancakes. I call them Hulk pancakes because they are bright green, like the Hulk, this is due to the spinach which is a silent ingredient that the kids won't even taste. The kids love the novelty of the colour and they are so very easy to make.
What I love about these is that you put everything into the blender and you just whizz it up! No whisking, no effort, so simple and quick, which is what you want.
I also have the a really rubbish frying pan at the moment, and I'm still able to fry up 3 of these pancakes at a time, which makes the whole process a lot quicker!
Give them a go! The kids will absolutely love them!

If you don't have cinnamon or chia seeds don't worry!
Whilst the cinnamon adds flavour and the chia seeds add lots of nutritional goodness, don't worry if you don't have these in your cupboard. You can make these without them. I buy this cinnamon from amazon, and it lasts for ages https://amzn.to/3W1HGJ9

Add honey for extra sweetness
If your bananas aren't the ripest - add a tablespoon of honey for extra sweetness.

Storage

Measure out your spinach and porridge oats. Make sure your bananas are nice and ripe to ensure your pancakes are nice and sweet! The more brown spots the better!

Place all your ingredients in blender and blend for 60 seconds until you have a bright green mixture.

Put your frying pan on a medium heat. I usually do this as the mixture is being blended. It gives you a bit of a head start and makes sure your pan is nice and hot by the time the mixture is blended.

Pour out the mixture into 3/4 small pancake circles in your pan. Leave them for 2-3 minutes before flipping onto the other side. The pancake should look nice and golden on each side. Then voila! It is ready to serve.

Keep going until you have a delicious stack of pancakes! Serve with peanut butter, honey, butter or banana slices!
